The cuisine of Bansko

The cuisine of Bansko, which is served in all folk taverns and restaurants in Bansko, is exceptionally original. The large diversity of home-made dishes, with unusual and strange names like: kappama ‘a la Water-Miller’, chomlek, spit ‘a la Bansko’; sache; lamb specialities, cheverme, small beer, home-made small and round loafs, Kakino meze, kostureta s chisel i chekane ‘a la Bansko’, dropka, the ‘Old-Man-of-Bansko’, kurvavitsa i sudjuk (seasoned sausages), shupla, kukurini, sulovra, katuk, tsrekulachi, whole-boiled - may enchant everyone. This authentic cuisine is both exotic to the citizens and the tourists, and supplying real culinary delight. Each last Saturday of May is organised culinary exhibition of dishes ‘a la Bansko’, at which each of the participants may demonstrate his genuine culinary skills.
